quality ingredients make the difference

We passionately believe that the quality of the ingredients we use make a huge difference to our food. We try to source locally where possible, but whilst you will certainly not find the likes of Kenyan beans or New Zealand lamb anywhere in our menu, we would rather go for quality than being slavishly local.

Herefordshire, where we live, has some great products, but it does not yet have the range of artisan producers of counties such as Dorset, Cumbria or Devon. If you are a high quality producer, particularly local to us, who could supply then we would love to hear from you as we are very keen to use more local ingredients when possible.

Quite a lot of our ingredients are organic, but as we are not registered organic ourselves we are not permitted to label which are and which are not! We use organic ingredients, or not, based on taste and not doctrine.

Our main suppliers currently are:

Meat
Devon Rose, Seaton, Devon (high welfare free range meats and lovely people, established since the 1920s)
Creedy Carver, Crediton, Devon (exceptional traditionally reared free range chicken and duck)
Cornvale Foods, Carnforth, Lancashire (Vale of Lune and Herdwick lamb, beef and Gloucester Old Spot pork)
Sally Whittall, Shropshire (Gloucester Old Spot pork)

Fish
Wing of St Mawes, Cornwall (really fresh fish from people with great knowledge)
Framgord (fabulous organic salmon from Shetland)

Vegetables
Rainbow View Project, Peterchurch, Herefordshire (freshly harvested veg, just up the lane from us)
Wild Harvest, New Covent Garden, London (wild mushrooms, Coco Blanc beans and the like)

Dairy
Cream - Val Collinson at Bower Farm Dairy, Monmouthshire
Butter - either AOC D'Isigny, or Netherend Farm, Gloucestershire

Cider
Westons, Much Marcle, Herefordshire

Miscellaneous Ingredients
Eggs - Mrs Powell, Old House Farm, Michaelchurch-Escley, Herefordshire
Puff pastry - Sarl Francois, Blancafort, France (just the best and used by many top restaurants)
Flour - Shipton Mill, Gloucestershire (their soft cake and pastry flour is lovely)
Spanish ingredients - Delicioso, Oxfordshire
Chocolate - El Rey, Venezuela (we love this so much)
Speciality cheese - Anthony Rowcliffe & Son, Kent
